Batter Ratio: Corn: Doughy, 500gr Smedes Batter Mix | 550ml Water
Enoki: Tempura style, 500gr Smedes Batter Mix | 650ml Water
Method:
Corn: Salpicon - Enoki: Single batter coating
Preparation Corn
- Cut the corn into coarse pieces
- Prepare the batter according to the doughy ratio
- Mix the smoked paprika and garlic powder through the corn
- Add the batter to the corn
- Make sure the corn sticks together well so you can form balls
- Deep-fry for 2-3 minutes
Preparation Enoki
- Cut the enoki mushrooms into thin strips
- Prepare the batter according to the tempura style ratio
- Mix the mushrooms with a little salt and dry batter mix
- Pass the mushrooms through the batter
- Deep-fry for 2-3 minutes
- Serve the corn and enoki with hot honey and soy sauce
