Vegetable Fritters

Crispy balls of julienne vegetables, prepared with the salpicon method for extra structure and bite. Lightly seasoned with curry and garlic, served with coriander mayo and hot honey. A unique, flavourful snack, perfect as a starter or bar bite.

Batter Ratio: Doughy, 500gr Smedes Batter Mix | 550ml Water
Method: Salpicon

Preparation

  • Cut carrot, sweet potato, courgette, onion and a little red pepper into julienne
  • Prepare the batter according to the doughy ratio
  • Mix the curry powder, garlic, ginger, salt and a little dry batter mix through the vegetables
  • Then add the batter to the vegetables
  • Form compact balls from the vegetables
  • Deep-fry the fritters for 2-3 minutes
  • Serve the fritters with coriander mayo, hot honey and sliced spring onion
