Batter: Smedes Batter Mix Golden Crispy
Batter Ratio: 500gr Smedes Batter Mix | 600ml Water
Preparation method
- Cut the chicken thighs in half
- Mix the batter mix with water
- Bake the ciabatta off in the oven
- Dip the chicken in the batter mix and fry for 4 minutes
- Mix the little gem with some basic dressing
- Spread the chimichurri on the ciabatta and top with the little gem and the chicken
Regenerate or pre-bake
- Fry the chicken a day in advance and let it cool in a perforated container
- Regenerate the chicken at 180°C with 5-10% steam for 6 minutes
