Batter: Smedes Batter Mix Yellow or Asian
Batter Ratio: Recommended, 500gr Smedes Batter Mix | 600ml Water
 

Preparation

  • Pass the tail of the prawn through the batter, but not the head.
  • Prepare Thai-style fried rice.
  • Deep-fry the prawn.
  • Garnish with nuts, coriander, and lime.

Regenerate or pre-fry

  • Fry the prawn a day in advance and let it cool in a perforated container
  • Regenerate the prawn at 180°C with 5-10% steam for 6 minutes
