Batter Ratio: Recommended, 500gr Smedes Batter Mix | 600ml Water
Preparation
- Pass the tail of the prawn through the batter, but not the head.
- Prepare Thai-style fried rice.
- Deep-fry the prawn.
- Garnish with nuts, coriander, and lime.
Regenerate or pre-fry
- Fry the prawn a day in advance and let it cool in a perforated container
- Regenerate the prawn at 180°C with 5-10% steam for 6 minutes
